LDL/HDL- cholesterol தொடர்பில் ஏற்பட்ட தவறை தவிர ஏனைய கருத்தில் எந்த தவறும் இல்லை. தாவர எண்ணெய்களில்/கொழுப்புகளில் கொலஸ்திரோல் இல்லை. தாவர எண்ணெய்களில் விலங்கு கொழுப்பு கலந்துள்ளதா/ தூய தாவர எண்ணெயா என சோதிக்க குறிப்பிட்ட எண்ணெய் அல்லது கொழுப்பில் கொலஸ்திரோல் இருக்கிறதா என சோதிப்பது ஒரு முறை. கொலதிரோல் இருந்தால் அது மிருக கொழுப்பு கலப்புள்ளது.

மற்றும்படி உண்ணும் தாவர எண்ணெய் வேறுபாட்டிற்கு ஏற்ப மனித உடலில் LDL cholesterol எனப்படும் low density lipoprotein ஆல் காவப்படும் கொல்ஸ்திரோல் (bad cholesterol ) இன் அளவில் அதிகரிப்போ குறைவு ஏற்படும். எனவே கருத்தை இரண்டாக உடையது முழுமையாக வாசியுங்கள். இரண்டாக உடைத்து புது விளக்கம் கொடுக்காதீர்கள்.

மற்றையது அவகாடோ எண்ணெய், சூரிய காந்தி எண்ணெய் ஒப்பீடு பற்றியது. சூரிய காந்தி எண்ணெயில் பல்-நிரம்பல் அடையத கொழுப்பமிலம் (poly-unsaturated fatty acid) லினோலிக் (linoleic) அமிலம் 69 % உண்டு. ஆனால் அவகாடோ எண்ணெயில் தனி-நிரம்பாத கொழுப்பமிலம் (mono-unsaturated) ஒலிக் (oleic ) அமிலம் 70 -74 % உண்டு.

சூரிய காந்தியில் அதிக அளவில் பல்-நிரம்பல் அடையாத கொழுப்பமிலம் இருக்கிறது என்பதற்காக அது நல்லது என்று அர்த்தம் அல்ல. :icon_idea:

சொல்லபோனால் அதிக பல்-நிரம்பல் அடையாத கொழுப்பமிலம் (poly-unsaturated fatty acid) இருப்பது உடலுக்கு பாதகமாக கூட அமையலாம்.

பல்-நிரம்பல் அடியாத கொழுப்பமிலங்களில் ஒன்றிற்கு மேற்பட்ட காபன்-காபன் இரட்டை பிணைப்பு இருக்கும். தனி-நிரம்பலடையாத கொழுப்பமிலத்தில் ஒரு காபன்-காபன் இரட்டை பிணைப்பு இருக்கும்.

Effect of dietary monounsaturated and polyunsaturated fatty acids on the susceptibility of plasma low density lipoproteins to oxidative modification.

Oxidized low density lipoproteins (LDLs) are thought to play an important role in atherogenesis. Nutritional and biochemical studies suggest that diet can modulate the susceptibility of plasma LDL to undergo oxidative degradation by affecting the concentration of polyunsaturated fatty acids and antioxidants in the lipoprotein particle. In the present study 11 healthy male volunteers underwent two diet phases. In one phase the diet was enriched in oleic acid (mono), while in the other it was high in linoleic acid (poly). Both diets lowered plasma total and LDL cholesterol contents. The sensitivity of plasma LDL to oxidation was estimated by challenging these lipoproteins with 2,2'-azobis(2-amidinopropane)dihydrochloride, a free-radical initiator. Although neither diet affected the antioxidant content of plasma LDL, the resistance to lipid peroxidation, measured after the consumption of antioxidants present in the lipoprotein, was higher during the mono phase. Indeed, the peroxidation rate of plasma LDL was inversely correlated with the oleic acid to linoleic acid ratio in the LDL particle. These results support the thesis that diets rich in monounsaturated fatty acids increase the resistance of plasma LDL to oxidative modification, independent of their content of antioxidants. This effect could lower the atherogenicity of these lipoproteins.

Monounsaturated Versus Polyunsaturated Dietary Fat and Serum Lipids

A Meta-analysis

Abstract The objective of this study was to examine whether oils high in monounsaturated or polyunsaturated fats have a differential effect on serum lipid levels, using a meta-analytical approach. Fourteen studies (1983 through 1994) were identified that met six inclusion criteria, the primary criterion being that a study have at least two intervention diets that varied in monounsaturated and polyunsaturated fat content but were otherwise similar in total fat, saturated fat, fiber, and dietary cholesterol. Seven studies included a comparable high-saturated fat diet. Standardized effect sizes (observed treatment difference in mean end-point lipid levels, divided by the pooled SD) were calculated for individual studies, then individual effect sizes were pooled. The results indicated no significant differences in total, LDL, or HDL cholesterol levels when oils high in monounsaturated or polyunsaturated fats were compared directly. Triglyceride levels were modestly but consistently lower on the diets high in polyunsaturated fats (P=.05). Replacement of saturated fat with either monounsaturated or polyunsaturated fat led to significant decreases in total and LDL cholesterol (P<.001), and the pooled effect sizes were comparable for either type of unsaturate (effect sizes ranged from −0.64 to −0.68, ie, roughly a decrease of 0.65 mmol/L [25 mg/dL] relative to the high-saturated fat diets). Neither type of unsaturated fat significantly changed HDL cholesterol or triglyceride levels relative to the high-saturated fat diets. In conclusion, the evidence from this meta-analysis strongly indicates there is no significant difference in LDL or HDL cholesterol levels when oils high in either monounsaturated or polyunsaturated fats are exchanged in the diet. Any dietary recommendations for the use of one in preference to the other should be based on outcomes other than serum cholesterol levels.

மொனோ.. பொலி இரண்டு நிரம்பாத கொழுப்புக்களும் சரியான அளவில் உட்கொண்டால்.. உடலுக்கு பெரிய அளவில் தீங்கைத் தரா. மொனாவை விட பொலி அதிகம் இருப்பது நல்லம். அதற்காக மொனா கூடாது என்று சொல்ல முடியாது. ஆனால் இவை நல்லம் என்பதற்காக அதிக அளவில் உண்ணக் கூடாது. அதேபோல்.. அதிகளவு நிரம்பிய கொழுப்பை உண்பதும் ஆபத்து. ஆனால் நிரம்பிய கொழுப்பும் உடலுக்கு அவசியம். குறைந்த அளவில் அதனையும் உண்ணலாம்.

Monounsaturated Fat

Polyunsaturated Fat

Polyunsaturated fats have two or more double bonds between carbon atoms in the carbon chain backbone of the fat. They are more solid than monounsaturated fats but less so than saturated fats. This makes polyunsaturated fats also liquid at room temperature. Some polyunsaturated fats are omega-3 and omega-6 fatty acids, which the body cannot produce, and therefore these fats must be acquired through diet.

Concerns

While they have shown health benefits, monounsaturated fats and polyunsaturated fats are still fats and should not be consumed overabundance. Like all fats, they have 9 calories per gram. The AHA says evidence has not shown one to be better over the other for health. Fats overall, including these two types, should make up less than 25 percent to 35 percent total daily calorie intake, the AHA says.

Two populations of Polynesians living on atolls near the equator provide an opportunity to investigate the relative effects of saturated fat and dietary cholesterol in determining serum cholesterol levels. The habitual diets of the toll dwellers from both Pukapuka and Tokelau are high in saturated fat but low in dietary cholesterol and sucrose. Coconut is the chief source of energy for both groups. Tokelauans obtain a much higher percentage of energy from coconut than the Pukapukans, 63% compared with 34%, so their intake of saturated fat is higher. The serum cholesterol levels are 35 to 40 mg higher in Tokelauans than in Pukapukans. These major differences in serum cholesterol levels are considered to be due to the higher saturated fat intake of the Tokelauans. Analysis of a variety of food samples, and human fat biopsies show a high lauric (12:0) and myristic (14:0) content. Vascular disease is uncommon in both populations and there is no evidence of the high saturated fat intake having a harmful effect in these populations.

Mixed messages abound about coconut and health. Is it a fatty treat, to be eaten with care? Or a miracle food, as some websites claim?

Much can be said about the pleasures of coconut. Certainly the cuisines of a large number of countries, from India to Indonesia, would be much the poorer without it. But would they be healthier?

Coconut is one of those foods that seems to ping-pong between the 'good food' and 'bad food' list, and if you're confused about this, don't worry – even the experts can't quite agree.

The confusion starts because of the differences between the use of coconut oil in cooking, and the use of coconut milk or coconut flesh. Both the American Heart Association and the National Heart Foundation recommend avoiding the use of coconut oil for cooking, but both their websites include recipes that contain coconut milk, albeit a reduced-fat version.

Despite the fuzzy perception that all things plant must be better for us, oil made from coconuts actually contains a whopping 85 to 90 per cent saturated fat. Saturated fats, usually the dominant type in animal foods, are generally regarded as the baddies when it comes to heart disease.

Even reduced-fat coconut milk contains about 10 grams of saturated fat per 100 grams, compared to about 2.3 grams per 100 ml in reduced-fat cow's milk.

There are a number of websites claiming that the saturated fats in coconut oil are different to the saturated fats we're told to avoid in animal products. They also claim that coconut will help you lose weight, prevent wrinkles, treat serious illness, and, well, change your life.

All saturated fats are not equal

It's true that saturated fats differ from each other chemically – depending on the number of carbon atoms they carry – and different foods have varying concentrations of the different saturated fatty acids. The saturated fat in coconut oil consists mainly of the lauric acid and myristic acid, with lesser amounts of palmitic acid, whereas chocolate and beef are dominated by palmitic acid.

There's no doubt that all the fatty acids in coconut oil raise cholesterol, but the more important question is what kind of cholesterol do they raise – is it the bad LDL cholesterol, or the good HDL cholesterol?

The research isn't entirely clear on this point, but it seems the fatty acids found in coconut oil do raise LDL – bad cholesterol – as do other saturated fats, like butter.

But coconut may also raise HDL cholesterol – good cholesterol – to some extent, though not as much as unsaturated fats (the good fats).

So it's fair to say if you suddenly swap your olive oil for coconut oil, it's not going to do your cholesterol levels any favours and in particular, your levels of bad cholesterol will go up.

Fats, foods and heart disease

What does this actually mean for health outcomes? It's not good news, as one study comparing the number of deaths from heart disease between residents of Singapore and Hong Kong found. The number of deaths was around three times higher in Singapore, and one of the factors that researchers blamed for this was higher consumption of coconut and palm oil in Singapore. (Like coconut oil, palm oil is high in saturated fats, but the two differ in their fatty acid make-up.)

Having said that, coconut oil is not the worst fat to use. A study by Dutch researchers, for example, found that consumption of fat rich in lauric acid, as coconut fat is, is still better for your cholesterol profile than fat high in trans-fatty acids – a form of unsaturated fat created during manufacturing of foods like biscuits and pastries, which are known to be even worse than saturated fats for your cholesterol profile.

But then there's a puzzle. Several studies have looked at the health of people whose diets are particularly high in coconut products – oil, flesh and milk – and found that when their whole diet is taken into consideration, coconut is actually a benign and possibly even helpful component.

Professor Mark Wahlqvist, director of the Asia Pacific Health and Nutrition Centre at Monash University, has been examining the health of people in West Sumatra for around 25 years. Coconut is a staple of West Sumatran cuisine, particularly among the people of the Minangkabau region, but lately its use has been declining as more convenient cooked foods have become readily available. At the same time, the rates of coronary heart disease have gone up.

The reason could be that while they do consume a lot of coconut product and use the oil extensively for cooking, the Minangkabau people use it in conjunction with high intake of fresh fruit, vegetables and fish. In fact, the use of coconut actually encouraged consumption of fish and vegetables, as anyone who enjoys a good Thai fish curry can well appreciate.

Professor Walhqvist's research also found that it wasn't the amount of fat – either saturated or unsaturated – in their diet that made the difference between a healthy or unhealthy heart, it was how much meat, eggs, sugar, carbohydrates and cholesterol. People with heart disease tended to eat more meat, eggs and sugar, and have higher intakes of protein and cholesterol, but they had lower intakes of soy products and carbohydrate such as rice and cereals. Most importantly, coconut consumption as flesh or milk was the same for both the healthy or unhealthy people.

This could explain why organisations such as the National Heart Foundation and American Heart Association include recipes containing coconut milk on their websites.

Chances are, if you're using coconut milk, you're going to be cooking something with plenty of fresh vegetables and perhaps some chicken, fish or tofu. If you use fat-reduced coconut milk, whatever saturated fats you get from the coconut will be balanced by all the benefits you get from the hefty dose of vegetables and other ingredients.

So while it's probably not a good idea to switch from olive oil to coconut oil, hang on to the fat-reduced coconut milk and use it to make a vegetable-laden Thai fish curry every once in a while.

இங்கு எழுதப்பட்டுள்ள பிரதான அம்சங்கள்:

1. அவகாடோவில் கூடிய நல்ல கொழுப்பு உண்டு. அதனை உண்ணலாம். ஆனால் நல்ல கொழுப்பு உள்ளது என்பதற்காக அதையே சாப்பிட்டுக் கொண்டிருக்கக் கூடாது. அது உடல் நலனிற்கு ஆகாது.

2. சூரியகாந்தி எண்ணெயில் எமது உடலால் தொகுக்க முடியாத கொழுப்பு உண்டு. அதன் தேவை உடலுக்கு அவசியம்..! இருந்தாலும் அதையும் அதிக அளவில் உள்ளெடுப்பது ஆபத்து. சிறிய அளவில் நாளாந்த பாவனைக்கு உட்படுத்தலாம்.

3. தேங்காய் எண்ணெயில் நிறைய நிரம்பிய கொழுப்பு (பொதுவில் கெட்ட கொழுப்பு என்று இது கொள்ளப்படுகிறது) உண்டு. ஆனாலும் அதில் இருக்கும் நிரம்பிய கொழுப்பு.. மிருகக் கொழுப்பில் காணப்படுவதை விட.. உடலில் விரைவாக பாவிக்கப்படும் வகையினது என்று சமீபத்திய சில ஆய்வுகள் சொன்னாலும்.. இவை உடலில் ஏதோ ஒரு வகையில்.. கொலஸ்ரோல் அளவை கூட்டக் காரணமாக உள்ளதாகவும் அறியப்படுகிறது.. சிலர் இதனை எதிர்க்கின்றனர். எனவே தேங்காய் எண்ணெயின் பாவனையால் வரக் கூடிய விளைவுகள் பற்றி உறுதியாக எந்த அறிவிப்பும் வெளியிடப்பட முடியாத நிலையில்.. அதனை நாளாந்தப் பாவனையோடு.. உட்கொள்வதிலும்.. தொடர்ந்து.. மரக்கறி எண்ணெய்கள்... சூரியகாந்தி எண்ணெய்.. ஒலிவ் எண்ணெய்யை நாளாந்த தேவைகளுக்குப் பயன்படுத்துவது நல்லம்..! ஆனாலும் இவற்றையும் அதிக அளவில் பயன்படுத்துவது உடல் நலனிற்கு உகந்ததல்ல..! எனினும் கொழுப்பு நீக்கிய தேங்காய்ப் பால் பாவனையில் சேர்க்கப்படலாம்.

தேங்காய் எண்ணெய் பற்றிய நிச்சயத் தன்மை இன்னும் தொடரும் நிலையில்.. அதன் பாவனை பற்றி முடிவெடுக்க.. இன்னும் ஆய்வுகள் செய்யப்பட வேண்டி உள்ளன. எனவே மக்கள் ஒரு உறுதியான அறிவிப்பு வரும் வரை அதனை நாளாந்தப் பாவனையில் இருந்தும் தவிர்ப்பது நன்று.

4. நிறைய நிரம்பாத நிலையில் உள்ள நல்ல கொழுப்புக்கள்.. உண்ணப்படும் போது.. ஒக்சியேற்ற தடுப்பான்களை.. (antioxidants) உண்ணுதல் பாதகமான பக்க விளைவுகளைக் குறைக்க உதவும். இந்த அன்ரிஒக்சிடன்ற்கள் வெங்காயம்.. கரட்.. ஒரேஜ்.. பிளாக்பெரி.. ஸ்ராபெரி.. மாதுளைப்பழம் என பல மரக்கறி மற்றும் பழ வகைகளில் காணப்படுகின்றன..! இவற்றையே எம் முன்னோர் இரத்த சுத்திகரிப்பான்கள் என்று சொல்லி சாப்பிட வைக்கின்றனர்..!
